Scoop & SundaeWarming up the churn

Artisan ice cream Whitby, North Yorkshire

Churned slowly. Gone quickly.

Small-batch ice cream, made every morning in a pastel parlour on Marine Parade. Cones, sundaes and tubs to take home, plus a pink van on the front whenever the sun comes out.

Scroll to start the churn

01 The churn

The churn

The milk

Poured at six.

Whole milk and double cream arrive from a dairy near Sneaton before the gulls are up. It goes into the churn cold, with sugar and a pinch of salt. No powders, no stabilisers, nothing you cannot pronounce.

Held at 4 degrees from cow to churn

The churn

Slow, then slower.

The dasher turns while the drum chills to minus nine. Ice crystals stay tiny, a little air folds in, and the mix thickens into something properly smooth. Hurry it and it turns icy, so we do not.

Twenty-two minutes a batch

The ripple

Fruit, folded by hand.

Strawberries from a farm at Sleights go in last, crushed with a fork and never pureed. The ripple stays ribbon-bright instead of melting into the cream.

Batches of twelve litres, no more

02 The tubs

The tubs

Tub one, the classic

Vanilla.

Madagascan pods, split and scraped into every batch. The flecks are real and so is the flavour. Plain, but never boring.

Our best seller since the first summer

Tub two, the green one

Pistachio.

Sicilian nuts, roasted and ground in the back room until the whole street smells of them. Pale green and properly nutty, never neon.

Seven per cent nuts

Tub three, the seasonal one

Strawberry.

Berries from Sleights from June onwards. Out of season it quietly becomes rhubarb, because we would rather change flavour than cheat.

Always local fruit

Tub four, the dark one

Chocolate.

Seventy per cent cocoa and a little sea salt. Dark enough for grown-ups, and still gone by Sunday teatime.

Dairy-free version in the van

Tub five, the favourite

Salted caramel.

Sugar cooked past golden, calmed with cream and a pinch of sea salt from down the coast. A ribbon of it runs through every scoop.

Cooked in copper, stirred by hand

Tub six, the sunny one

Mango.

Alphonso mangoes and a squeeze of lime, nothing else. Bright, golden and entirely dairy free, so everybody at the table can have a scoop.

Vegan, and proud of it

03 The cone

The cone

The press

Pressed to order.

Batter goes onto the iron the moment you ask. Thirty seconds, a hiss of steam, and the whole parlour smells like a bakery.

Never made ahead

The roll

Rolled while warm.

A wooden former, quick hands and a pinch at the tip so nothing drips through the bottom. A moment later it holds its shape for good.

Crisp outside, soft in the middle

The scoops

One, two, three.

Warm scoops, pressed with a firm twist so they sit proud of the rim. Up to three flavours, stacked in whatever order you choose.

Heavier than they look

The finish

Sauce, sprinkles, cherry.

Sauce down the side, sprinkles from a height, and the cherry last, always. That is the rule and we do not break it.

A cherry is 30p. Worth it.

05 The sundae bar

The sundae, layer by layer

Layer one

Brownie.

Warm chocolate brownie, baked each morning and broken up by hand. It goes in the bottom of the glass, where the sauce can find it later.

Baked at seven, gone by three

Layer two

Two scoops.

Vanilla and pistachio, side by side, because the glass is wide enough to share and the colours look good together.

Swap either for any tub

Layer three

Strawberry sauce.

Poured slowly, so it runs down between the scoops and shows through the glass. Sleights berries, cooked for ten minutes and no more.

No jam, no colouring

Layer four

A cloud of cream.

Whipped by hand and piped in one long spiral. The proper height is about as tall as your hand, and no shorter.

Double cream, nothing squirted

Layer five

The crown.

A rolled wafer, a paper umbrella and the cherry, always the cherry. A long spoon on the side, to reach the brownie.

06 The seafront

The summer seafront

On the front

The van is out.

When the sun is up, the pink van parks on Marine Parade by the railings, a short walk from the swing bridge. You will hear the chime before you see it.

Weather permitting, mostly

The hatch

Hatch up, queue forming.

Cones, 99s, lollies and cold drinks, plus a few tubs to take home. Card or cash, and the tune is not optional.

From eleven until the sun goes

Golden hour

The long evening.

The abbey goes gold on the headland, the gulls wheel overhead and the last queue of the day forms. Eat it before it drips.

Open until sunset in summer
